Goat & Lamb Meat Cuts

Fall 2025

In the fall of 2025 we are expecting to have one goat ready for processing which should yield 40-60 pounds of meat total. The meat will be individually packaged and frozen. Prices are determined by the weighted average in USDA report for the previous month, the cut, and weight.

All meat comes from a USDA inspected processor and is sold under Colorado’s Ranch to Plate Act.

The Cuts

  • Shoulder Steaks

    Shoulder steaks are flavorful and rich in marbling. Good for grilling or searing on the stove. Works well on top of a salad or with some french fries and beans.

  • Shoulder Roast

    Similar to a shoulder steak, but can be roasted as a dinner centerpiece, cut up for stew, smoked, or slow cooked. Approximately 4 steaks per roast.

  • Chops

    Similar to a pork chop with plenty available. Great seared, grilled, or smoked.

  • Leg of Lamb/Goat

    A larger cut, similar to a roast.
