Duck Eggs and the Flock

Duck eggs are generally larger than chicken eggs and have larger yokes. Some pastry chefs prefer duck eggs since they can help baked goods rise even without a leavening agent like baking soda. When cooking duck eggs on the stove top keep a close eye on them as they are easy to overcook.

We don't use any artificial lights to extend the laying season, so the egg supply generally tapers off in the winter. The flock is made up of a variety of breeds, so each carton will have a variety of sizes and colors.
