The Cuts

  • Ground Goat

    Very versatile meat which can be made into burgers, put into pasta, or anywhere else ground beef is used. It is fairly lean, so adding some oil or other fat to dishes is helpful. It is great for mixing in different spices to complement most any dish.

  • Stew Meat

    Similar to ground goat, but is cubed. Holds up well in curries, stews, pasta, soups, etc. Wonderful to marinade to inject extra flavor and tenderize.

  • Ribs

    Similar to other ribs, great for grilling, brazing, or smoking. Tenderizing methods help enhance the texture whether that is marinading or slow cooking.

    Available between about 1.1 lbs and 1.8 lbs. $15/lbs

  • Rack of Goat

    Already frenched and ready for roasting. Can be tied together to form a crown roast to wow dinner guests.

  • Shoulder Steaks

    Similar to a finely marbled petite sirloin a shoulder steak is great with a dry rub and thrown on the grill. Also tasty to cook up in a cast iron skillet to put on a salad.

  • Shoulder Roast

    Well marbled cut of meat which is great for slow cooking methods. Cooked in a slow cooker or smoker the marbling helps keep the roast moist and delicious.

    Available between about 2.75 lbs to 4.5 lbs. $19/lbs

  • Shank

    Slightly tougher cut which benefits from from low and slow cooking with plenty of moisture. Braising to put into a soup or stew lends the shank meat to fall right off the bone.

  • Leg of Goat

    More of a lean roast, a leg of goat is great for grilling or roasting for a dinner centerpiece and conversation starter. Can be seared for a beautiful crust and then braised for a tender result.

  • Chops

    Similar to pork chops, goat chops go well with a liberal application of BBQ sauce and charred nicely on the grill or cast iron skillet.

  • Loin

    Known for its mild flavor and tenderness goat loin works well with quicker cooking methods like searing and grilling.
